Description
Raw cocoa beans and other ingredients go through a series of complex processes in order to produce the final product. This includes drying the cocoa beans, separating the cocoa butter from the dry cocoa mass, and mixing the cocoa mass with sugar crystals and other ingredients. How finely the combined ingredients are milled determines the smoothness and texture of the chocolate. Ideally a micron size of between 12 and 25 is considered most desirable. A micron size of 30 or above has been found to be less desirable for consumers.
