With a name that suggests stretching the truth, it’s probably no surprise that the true origin of fudge is a bit sketchy. One story recounts it being invented by accident on February 14, after a failed attempt to cook caramels. Regardless of the origin, fudge was probably invented in the United States – sometime in the late nineteenth century.
Unlike other sweet confections, fudge can be made quite simply and is a traditional recipe, that is often made by home cooks. This may have contributed to the variety of different recipes that have developed.
